Pumpkin Apple Oats
I thought I'd share my yummy breakfast with you all (I'm enjoying a bowl right now!). It's porridge made with fruit and vegetable puree stirred in. You can basically make any combo of fruits and veggies that will make a tasty puree. This is my favourite at the moment.
To make the puree:
1. Peel and chop a pumpkin, or if you can't get one, use a butternut squash.
2. Peel and chop some tangy apples (I used Granny Smiths).
3. Steam, boil or microwave (steam if you can) the apples and squash until tender. Put in the food processor and blend until you have a beautiful, brightly coloured puree! (If you do not have a food processor you can mash the fruits and veggies and then push them through a sieve.) Store in a tupperware box in the fridge.
To make the Pumpkin Apple Oats (Serves 1):
1. Measure out half a cup of oats, half a cup of water and half a cup of milk into a small saucepan. Add 2 heaped tablespoons on your puree and now you can add other things if you fancy them. I included half a teaspoon of cinnamon and a few raisins.
2. Stir well on a high heat until thick and creamy.
3. Transfer to a bowl and top with nuts, yoghurt, fresh fruit, nut butter...whatever you fancy! I added a teaspoon of peanut butter and a teaspoon of raspberry jam.
Variation:
If you haven't got time to be fiddling around with purees, try adding a mashed banana to the oats, and a teaspoon of cocoa, and your breakfast becomes banana chocolate oats. Yum!

I love organic yogurt, flaked almonds, roasted hazelnuts & toasted seeds in my porridge. Sometimes I sprinkle the powder of spirulina shake from the health food store in & it gives it a different flavour & makes it creamy like a moose (there's loadsa different flavours like cookies n cream & strawberry & peanut caramel)
How creative & fun - thanks Claire, even as I was reading I was feeling warm with the wholesomeness of it
