Salmon with Potatoes and Spinach
Ingredients for 4 servings:
4 Salmon steaks
4 Large potatoes, peeled and cut into 1 inch dice
4 tbsp curry paste
2 tblsp of coconut oil
1 chopped onio
3006 of spinach
Heat oven to 220C/gas 7. Rub salmon steaks with half the curry paste. Heat the oil in a roasting tray, then fry the potatoes and onion for about 10 minutes until starting to brown. Stir the remaining curry paste into the potatoes, then sit the salmon on top and roast for about 20 minutes until the salmon and potatoes are cooked. Lift the fish onto plates, the potatoes back over a heat, add the spinach to the pan and cook for 5 minutes.
